Hi, AFAIK "hiding" the ESSID merely means "not broadcasting it", i.e. not letting the world know you're out there. Once a client knows the ESSID of an AP (e.g. because a used entered it), it can establish contact with the AP. Similarly, once a client has connected to an AP, it knows the AP's ESSID, even if the AP later starts hiding it. The only way to prevent clients from staying connected/reconnecting is changing the ESSID as well as hiding it.
